Asparagus and Tomato Quiche

 I’ve had this quiche on my mind for weeks (ok. not true. I was rooting around in the freezer the other night for a quick dinner idea and the pie crust floated to the top of the freezer drawer).  Utilizing a boat load of teardrop and cherry yellow, red and orange tomatoes was what was really on my mind…and the combination of the crust and the tomatoes made it a no brainer dinner idea. 

The best thing about this quiche is that the essential ingredients are usually in the fridge. I say usually because on this particular night, I had only 4 eggs vs. the required 5 for this recipe. Within seconds, I was next door at Heidi and Jeff’s house borrowing the extra egg. The only requirement for the egg was a promise of a hefty serving once the quiche was prepared. Not. a. problem. 

Quiche + fresh fruit = simple summer dinner and  everyone was {somewhat} happy. See below.
