Cheesy Pesto Potato Bites

Cottage cheese had made a significant comeback in my life.  In fact, you’ll find it in the fridge at all times, ready to enhance many basic ingredients with flavor, protein, texture and nutrition. Take these cheesy pesto potato bites, for example. They are a perfect snacking combo of flavor, texture, taste and nutrition. Don’t get me wrong, a spoonful of cottage cheese right out of the carton is a perfect on it’s own, too.

If you’re like me, you cook once and eat twice or thrice.  The baby gold potatoes used in this recipe were cooked initially for dinner earlier in the week, but have now become a critical ingredient for my mid-afternoon snack.  Topped with cottage cheese, and jarred pesto, they are perfect. Take it up a notch with the seasonings if you’d like—it’s not mandatory. Want to know how I found out about the sunflower seeds? You’ll never guess. It’s an old secret I learned while working at a the hospital cafeteria.  Yep-I said it-hospital food. Seems impossible, doesn’t it?

    Yay for “cook once, eat twice” philosophy! Robin, these sound super tasty! When I first saw the little picture on the InLinkz, I initially thought you had done the same recipe as me! It’s funny how two totally different dishes can look so similar from afar 🙂
