4 Ingredient Tex Mex Beer Bread

Make this all purpose cheesy beer bread now and freeze for quick breakfasts and lunches during the holidays.  Get ready to slice off a piece of crusty on top, soft in the middle bread with a well of melty cheese. 

 Shiner Bock Beer Bread

 A baker I am not.

So when the founders of Recipe Redux decided to throw us a baking challenge, I paused briefly and then exhaled. It was a quick bread challenge.   I can do quick breads. 

Beer breads have been on the menu for many years, but to be quite honest, they were  never homemade. The cute little canvas bags of the pre-made mixes with drawstring ties always lured me in and, well, it’s actually an issue of laziness. Honestly, it’s easier to make at home than it is to go to a store and purchase a mix. Promise. 

I started with this basic recipe.   I knew I wanted to add Shiner Bock for the beer (the Tex part of the recipe) and after reading several of the comments, I  increased the sugar, added a blend shredded Mexican cheese  (the Mex reference of the recipe) and allowed the batter to rest for 30 minutes before baking. 

The result? A pocket of cheese in the middle of a crusty-on-top, soft-in-the middle all purpose bread.

    I love beer bread but the recipe I have calls for a stick of butter so yeah, it doesn’t get made often! Ha. This sounds great!
