Inside the fridge welcomes Sarah-Jane Bedwell, RD, media personality and national speaker! Sarah-Jane has appeared regularly on the TODAY Show during the past year and was just featured this morning recommending Fat-blasting 5 minute meals. Check it out! She also volunteers to create parent tip TV spots for Nashville Public Television. She was selected as the 2010 Emerging Dietetics Leader in Nashville and serves as a Media Spokesperson for the Tennessee Academy of Nutrition and Dietetics. As the official “Eat Like Me” food and nutrition blogger for SELF MagazineSarah-Jane has a valuable platform in which she can share information that she is both knowledgeable and passionate about!

ITF: Do you love food shopping or dread it? 

SB: Love it! It is fun to see new products, pick out fresh in-season produce and look for the best deals!

ITF: How do you plan your weekly meals? Create a spreadsheet of fly by the seat of your pants? Each week I plan dinners based on the recipes 

SB: I have found on my favorite blogs and magazines the week before as well as throwing in a few of our weekly stand-by’s

ITF: What is the most coveted food in the fridge right now for each member of the household? Why? 

SB: Husband: cheese-any type but especially blue-it’s the other love of his life! 🙂 Me: Berries and peanut butter! (I put berries in everything-salads, oatmeal, yogurt! And peanut butter is just plain good! (I buy natural peanut butter so I keep it in the fridge to prevent the oil from separating).

ITF: What is the oldest item in the fridge right now?

SB: Cheese-but it is a good thing that my husband likes moldy cheese, right! 🙂 Just kidding!

ITF: Do you believe in leftovers? 

SB: Yes! We always make extra of the dinner recipes so we can have them for lunch the next day. A whole shelf in my fridge is pretty much dedicated to leftovers.

ITF: What convenience product can you not live without?

SB: Pre-chopped onions-every recipe calls for them and so the pre-chopped version saves so much time-not to mention tears! 🙂

ITF: What cooking utensil/piece of equipment/appliance do you live for? 

SB: Food processor! You can do everything from make pie crust to salsa with it!

ITF: How have your cooking/shopping habits changed over the last 10 years?

SB: I definitely cook more and have learned that the more I cook, the more I expand my palate and the more foods I enjoy!

ITF: What was the last meal you cooked from scratch? 

SB: My husband and I made an amazing dinner the other night-sauteed spinach and mushrooms, steak and truffle-roasted cauliflower-yum!

ITF: What words of wisdom or advice do you have for other folks who are doing their best every day to fill the fridge? 

SB: Make sure your crisper drawer is always full of fruits and veggies that are easy to grab on the go!
