19 Sep Green beans with blistered tomatoes and toasted almonds
With a husband who has limited taste when it comes to vegetables, I find green beans on my dinner menu quite often. Green beans, along with asparagus and a green salad, are staples in the rotation and I’m often challenged with different ways to make them interesting. When it comes to green beans, it’s usually a variation of the recipe I’m about to share–mainly because I know the hubs will eat it. Hey, there’s nothing wrong with the default setting, right?
The toasting of the almonds and the blistering of the tomatoes elevates the basic dish with very little effort. Take the time to toast the almonds-I promise you won’t be disappointed! There’s so much flavor and texture going on in this dish that I don’t really find the need to add salt or pepper. Feel free to add if so desired.
