What's For Dinner? Easy Crockpot BBQ Beef Brisket-a la Ginger

Being laid up with a severed tendon does have its benefits. I can’t cook per se or wash dishes! I’m fortunate enough to have dear friends who are willing and able to cook for us and we certainly are grateful to those who offer!

Take for example my kind-hearted friend, Ginger. Ginger is a rouge cook-she takes risks in her cooking-following recipes here and there but also throws caution to the wind when necessary. Let me tell you something–she is a great cook–but this has to be one of her VERY best dishes ever!  Thank you, G!

I turned this flavorful meat into brisket tacos-sauteed onions, corn tortillas and fresh salsa. That’s it. My family and I were in heaven.  It is going into my menu rotation in 2011!

BBQ Beef Brisket A La Ginger
(note: I cut and pasted this recipe directly from Ginger’s email)

3-4# chuck roast
12 oz can of beer
14 oz ketchup
1/2 c. brown sugar
Just combine the beer, ketchup and brown sugar in the crockpot and then add the roast. Cook 6-8 hours.  Awesomeness.  I might have also added a Chipotle Beef bouillon cube to the mix….kinda can’t remember now if I did or not.
