21 Nov Recipe Redux: Middle Eastern Rice
Robinsbite intern Leah Wakefield took a stab at Recipe Redux this month with a really unique and tasty rice dish. I can’t wait to try it on my family! Thanks for sharing, Leah!

When I asked my mother to share her “secret” rice recipe for Recipe Redux, in all honesty, there was a tad bit of hesitation in her voice. Luckily, she was feeling particularly giving the day before Thanksgiving, so I wheedled each and every ingredient out of her. Her rice recipe is a staple at dinner, whether it’s a holiday, potluck or just Monday night dinner. This rice is the perfect complement to just about any dish, and after you give it a taste, you’ll be surprised by the small amount of ingredients this recipe calls for. The cumin and caraway provide pungent Middle Eastern flavors, which I find perfect for cooler temperatures. Just don’t expect leftovers with this one!
Recipe:
- 4 cups of Chicken broth
- 2 cups of brown rice
- 1.5 Tbsp Cumin
- 1 Tbsp ground Caraway
- 1 tsp. salt.
- 1/2 cup pine nuts
- 1 cup blanched almonds
- 3 Tbsp butter

Posted at 14:46h, 23 NovemberThanks Serena! She has quite a few, which is why I’m always bouncing ideas off of her. Although, her baklava is my favorite, and that is one I tend to go home for. I don’t have her patience in the kitchen!!
