School is officially back in session and it already feels like fall. The air is cool and the leaves are falling. What’s up with that?! If only it could be summer all year round. But wait, technically we have…2 weeks of summer left! That means there’s still time for weekend beach trips, margaritas, and delicious seasonal fruit. A sweet, juicy peach just screams summer to me. So, in celebration of the last weeks of summer, I made a peach cobbler recipe that’s just so…peachy!
Peachy-Keen Cobbler
Ingredients:
1 peach, thinly sliced
1 plum, thinly sliced
¼ cup walnuts, crushed
¼ cup dates, chopped
3 tbsp whole wheat flour
1 tbsp cinnamon
1 tbsp maple syrup
1 tbsp apple cider
1 tbsp skim milk
½ tbsp brown sugar
Directions:
1. Preheat oven to 325 degrees.
2. In a bowl, combine flour, cinnamon, walnuts, and brown sugar. Stir.
3. Add milk to the flour mixture. Mix together until a crumb is formed.
4. In a separate bowl, combine sliced peaches, plum, and dates. Pour apple cider over fruit and mix.
5. Fill a small ramekin with fruit and top off with crumb mixture.
6. Place ramekin in the oven and let bake for approximately 20 minutes. Serve.
