21 Sep {The Recipe Redux}: No-bake Pumpkin Pudding Trifle

It’s time.
Pumpkin time. In the last two weeks I have made pumpkin waffles, pumpkin cookie dough and pumpkin bars. And now my mind is going non-stop thinking about what else I could do with pumpkin. And the real kicker is, I really don’t even know if I like pumpkin. I mean, I like carving pumpkins…except when you are picking out the perfect pumpkin at a pumpkin patch and you grab one by the stem and it has just about 36 baby thorns that jam into your fingers. Less than ideal.
It seriously took me years to try pumpkin pie. My thought was, why is there a squash in my pie? And then I made this recipe last Thanksgiving and I realized just how much I had been missing out on. Oh goodness. I will be making that recipe again this year. Hmm…maybe I should do a pumpkin-pie-making test run soon. You know, just to make sure it still will turn out okay. I mean, it’s sounds completely essential. Nothing wrong with being prepared.
One wonderful thing about pumpkins is that they are just as versatile as bananas. They’re oh-so great to bake with because they add moisture and can be used in place of butter, just like applesauce or mashed banana. Plus, you can’t think of anything pumpkin without a small voice inside your head screaming, “CHRISTMAS IS COMING!”
And while a small part of me thinks that breaking out the pumpkin recipes before October is kind of like putting up your Christmas tree before Thanksgiving, I’m still not willing to forgo all things pumpkin until the end of the month. Especially when you blend together tofu + pumpkin and it somehow comes together to make the most creamy and delicious pumpkin pudding you ever did taste. For sure one of my new favorite ways to eat tofu.
Plus, this months Recipe Redux theme is “No-bake desserts” which is oh-so perfect when you live in Texas and the 90 degree weather could careless that it’s nearly fall. So I’m really all about leaving the oven off. And I’m all about eating pumpkin. So this recipe is just perfect.
