Inside the Fridge Welcomes Food Blogger and Robinsbite Intern Kylie Held

Kylie Held is a future Registered Dietitian who just began her dietetic internship at The University of Texas School of Public Health in Houston.  She is also the healthy food blogger behind Yeah…imma eat that, a blog that makes healthy eating exciting.  Recipes found on Yeah…imma eat that try to encourage the belief that healthy food is not only easy to prepare, but is something to crave.  Kylie’s recipes have recently been featured by Fox News and Chobani.  But most importantly, she is currently an intern here at Robinsbite! Her favorite things include Mexican food, pretending like she can rock climb, eating breakfast, stuffing things with peanut butter, avocados, planning her December wedding and baking things with oat flour.

ITF:  Do you love food shopping or dread it?

KH:  Love.  Like beyond love.  Everyone in my family knows to not go grocery shopping with me because (if I have the time) I could spend a couple hours wandering around the store.

ITF:  How often do you shop?

KH:  I usually do one big grocery shopping trip on Sunday afternoons.  However, I inevitably forget something/run out of almond butter/have a chocolate craving and find myself back at the grocery store at least 1 more time each week.  Interesting fact, I choose where I lived in college based on being close to the grocery store.  No joke.  Priorities.

ITF:  How many do you shop for?

KH:  Up until 1 week ago, I’ve shopped for only me for the past 5 years.  I’ve been at college and the worst thing in college was having to share a fridge with 3 other people…there just isn’t enough space.

ITF:  How many times a week do you eat out?

KH:  I really do enjoy eating healthy but I tend to follow the belief that everything should be eaten in moderation, including moderation.  So that being said, I do love to indulge in eating meals out and probably eat out 3-4 times a week.  I love you, Chipotle.

ITF:  How do you plan your weekly meals?  Create a spreadsheet or fly by the seat of your pants?

KH:  I go into the grocery store with one new recipe in mind that I want to make that week.  Sometimes it’s a recipe for a dessert and other times it’s for a recipe for lunch/dinner.  That is the only recipe/meal I have planned out.  Every other recipe I make is extremely impulsive.

ITF:  Do you believe in leftovers?

KH:  Umm YES!  When I’m making a meal, I always make extra so I will have leftovers.  Plus, so many foods get even better the longer they sit in the fridge (within reason).  For example, enchiladas and pasta salad definitely get better the day after.  It’s like magic happens in your fridge overnight.  The flavors keep melting together and soon you’ve got the most delicious plate of food you could have ever dreamed of.

ITF:  What convenience product can you not live without?

KH:  Oat flour.  I seriously don’t go two days without using oat flour in a recipe.  Usually I use it in a breakfast recipe but I occasionally make healthy cookie dough for a snack.

ITF:  If one person could cook for you tonight, who would it be?

KH:  Hands down, my favorite blogger.

ITF:  What are your go-to food/nutrition/culinary/cooking websites, book or cookbooks?

KH:

ITF:  What words of wisdom or advice do you have for other folks who are doing their best everyday to fill the fridge?
 
KH:  My advice would be to make one homemade recipe a week.  Just a single recipe each week is not too overwhelming of a task and it will begin to familiarize yourself with ingredients.
