02 Jul Eat Your Fruits and Vegetables Month: So, Make Some Pizza Recipes

Happy National Fresh Fruits and Vegetables Month! My initial thought was, “How wonderful!” However, I soon realized, “Shouldn’t every month be Eat Your Fresh Fruits and Vegetables Day?” Since I don’t have control over national food holidays, I thought of some clever ways to get excited about fruits and vegetables. (ideas suitable for picky eaters- both kids and adults!).
Veggie Pita Pizzas
Get kids excited about veggies! Make a display of different vegetable toppings and allow kids to make their own shapes and pictures right on their pizza. I guarantee you’ll have just as much fun as they will-I know I did when making these homemade pizza recipes.
Ingredients:
1 whole wheat pita
1 tsp. garlic, chopped and minced
1 tsp. olive oil
4 tbsp. pizza sauce
1/4 c. part-skim mozzarella cheese
You choose the veggies! Spinach, tomatoes, peppers, broccoli, mushrooms, peas, eggplant, zucchini, onion…anything goes. Slice them, chop them, dice them- you’re the chef. Be creative and have fun. Make your pita pizza your own work of art.
Directions:
1. Preheat oven to 400 degrees. Brush the olive oil on your pita. Add the chopped garlic and onion.
2. Spoon and spread the tomato sauce onto your pita so that it covers the entire pita.
3. Add the vegetables and top with cheese.
4. Bake for approximately 10 to 12 minutes.
Makes 1 pita pizza
*Note: If you want to show off your picture or shape, place the cheese on the pizza before the vegetables.
If you’re feeling a little more adventurous, try this…
Pear and Almond Pizza
Ingredients:
1 whole wheat pita
1/2 anjou pear, sliced thinly
6 almonds, chopped
1 tsp. olive oil
1 tbsp. chopped garlic
Dash of dried oregano
Directions:
1. Preheat oven to 400 degrees. Brush olive oil onto your pita. Add the garlic.
2. Slice the pear vertically. Place pear slices around the pita.
3. Place in the oven for approximately 10-15 minutes.
Once removed, add oregano.
Grilled Pear with a Strawberry Yogurt Dip
Doesn’t dipping make everything taste better? Serve this recipe at your next barbecue as an appetizer or dessert.
Ingredients:
1 anjou pear
1 cup plain greek yogurt
1 tbsp. honey
2 tbsp. pureed strawberries (or strawberry jelly)
Directions:
1. Slice the pear in half (lengthwise) or in wedges and place on the grill. Grill for 3-5 minutes.
2. In a small mixing bowl, combine the yogurt, honey and pureed strawberries. Mix thoroughly.
3. Eat up!
