It’s safe to say that everyone has gotten the Breakfast is the Most Important Meal of the Day message. And it’s a good thing-because it’s true.
For me, eggs a regular in the breakfast rotation l (and sometimes dinner rotationl). Scrambled, over easy, hard boiled; with yolk, without yolk; microwaved in a mug or old school in a pan-I’ll eat them any way they come.
There’s a special place in my heart, however, for egg salad. Egg salad is my very once in a while go-to breakfast, mostly because I forget about it as I’m eating eggs every other which way. Thanks to the Recipe Redux gals, this little recipe is getting some love today.
When first started enjoying egg salad, I would only eat it as a purist would-mayo, salt and eggs. As my palate and cooking skills have developed, my favorite recipe has become just a touch more involved. The best thing about egg salad recipes is that they are forgiving. Don’t like Dijon mustard? Leave it out. Want a bit more avocado? Throw it in. Hate mayo? Fine. More pickle? Go for it. You get the gist here.
It’s fine to make this egg salad for lunch or dinner, but BE SURE to make extra for the next morning.
You won’t be sorry.
