Recipe Redux: Truffle and Parmesan Popcorn

With the Oscars just around the corner, spending four hours staring at bombshell beauties in glamorous fitted evening gowns might feel slightly better while crunching on a skinny-mini snack. This light snack doesn’t sacrifice taste whatsoever, and the truffle oil (although a splurge) creates an evening of affluent tastes…it’s the Oscars afterall! In fact, this treat would go quite  well with a fancy glass of bubbly. And, when the hubby asks why you’ve fallen silent at the mere sight of Bradley Cooper, no need to lie, just shove a handful of that trufflicious treat into your mouth and your response will be incomprehensible.

  • 1/4 cup finely chopped fresh chives
  • 2 teaspoons black truffle oil
  • Salt and freshly ground black pepper
  • 1 cup grated Parmesan
  • 1 teaspoon garlic salt
  • 1 bag microwave popcorn OR stovetop or air-popped popcorn (preferred)
Use shredded parmesan and diced chives for garnish!

This recipe was adapted from Food Network’s Truffle Parmesan Popcorn recipe. And we reduxed this by nixing the butter and adding garlic salt for even more flavor. Oh, and we strongly recommend avoiding unnecessary additives by stovetop or air-pop popping your kernels.
