Recipe Redux: Middle Eastern Rice

When I asked my mother to share her “secret” rice recipe for Recipe Redux, in all honesty, there was a tad bit of hesitation in her voice. Luckily, she was feeling particularly giving the day before Thanksgiving, so I wheedled each and every ingredient out of her. Her rice recipe is a staple at dinner, whether it’s a holiday, potluck or just Monday night dinner. This rice is the perfect complement to just about any dish, and after you give it a taste, you’ll be surprised by the small amount of ingredients this recipe calls for. The cumin and caraway provide pungent Middle Eastern flavors, which I find perfect for cooler temperatures. Just don’t expect leftovers with this one!

Recipe:

  • 4 cups of Chicken broth
  • 2 cups of brown rice
  • 1.5 Tbsp Cumin
  • 1 Tbsp ground Caraway
  • 1 tsp. salt.
  • 1/2 cup pine nuts
  • 1 cup blanched almonds
  • 3 Tbsp butter
Boil the chicken broth with salt, Cumin, Caraway, and butter. When broth is boiling, add 2 cu of rice and lower the flame to a simmer. When ready to serve, lightly sautée pine nuts and almonds in butter and sprinkle on top of rice.

      Thanks Serena! She has quite a few, which is why I’m always bouncing ideas off of her. Although, her baklava is my favorite, and that is one I tend to go home for. I don’t have her patience in the kitchen!!
