Recipe Redux: Staycation Strawberries

This month’s Recipe Redux challenge involved sharing our “most memorable vacation meal.” Trying to recreate so and so’s dish from my trip to so and so is tempting, yet Mascarpone strawberries and poolside stay cations harbor some of my fondest memories. Found in the archives of one of my favorite sites, this has proven to be the perfect dessert for summer BBQ’s with family and friends. When it’s hot outside, baking bars in the kitchen pre-pool party is not always a pleasant experience, nor is it always swimsuit-able. Mascarpone strawberries sprinkled with brown sugar are sweet, summery, and perfectly portion control. There will never be any leftovers. I promise.

3 ingredients:

Strawberries

Lite Mascarpone or lite sour cream

Brown sugar

Dip, sprinkle, and enjoy…simply self-explanatory!

I can’t wait to give these a try! Strawberries + mascarpone, I’d never thought to combine them before, what an aweseome, simple idea.

Simple is an understatement. They are too almost too delish for how simple they are!

Beautifully back to basics Robin. Love it. And dreaming of our summer as I huddle under the covers tapping this in cold Aussie winter.
