I’ve always been a fan of orange chips.

Granted, my choices have improved (nutritionally speaking) over the years. Previously, my orange chip of choice was triangular in shape and was dusted with a bevvy or hard to pronounce ingredients. (Dorito, anyone? ) While there’s still a time and place for the occasional Dorito, I much prefer the sweetpotato as my chip of choice these days.  It’s simple.  It’s healthy.  It’s needs only two ingredients.  And, this particular version is made in the microwave.

Before this contest, I didn’t even know the variety that sweetpotatoes had to offer.  I’ve been buying orange sweet potatoes in the store for as long as I can remember.  So the news that California sweetpotatoes come in 3 gorgeous varieties that range in color from deep orange to white was a rather exciting.  When I opened the box of sweetpotatoes I received from The California Sweetpotato Council, I couldn’t get over how perfect every single one looked.  It was just pretty food.  

And those sweetpotatoes were made even prettier by the fact that a medium California sweetpotato contains 4 grams of fiber (hello, healthy digestion), 2 grams of protein (hello, essential amino acids), a good source of vitamin C and more than a day’s worth of vitamin A (hello, antioxidants), all for 105 calories per serving.

And with a recipe as simple as this, there is not even one excuse you can make to not give these chips a try.
