It’s like clockwork. 

The instant the temperature reads over 90º, I ask myself “Why do I live here?”  It’s a question I’ve asked at least 2 million times. When the temperature creeps into the 100’s, it’s unbearable.

As I get older, the heat is becoming harder to deal with–a tough fact to admit.  It’s hard to believe that it was common place for me to endure HITT workouts 3 times a  week–OUTSIDE- as recently as 2 years ago. I just can’t do it anymore.  These days, you’ll find me doing early morning walks with the dogs, swimming laps or in the yoga studio (thanks in part to the back injury sustained in late 2016).

How to Deal with the Heat

Ask anyone in Dallas or anywhere that has exceedingly high temperatures how they deal with the heat and you’ll get several stock answers:

  1. Stay inside
  2. Complain about it on social media or IRL. 
  3. Leave the city and go elsewhere.
  4. Eat popsicles

Sometimes popsicles alone -or maybe with a piece of fruit or cheese–suffice as dinner. It’s an easy way to cool down and feel refreshed at the same time. We popsicle up a lot of ingredients at our house and it’s not uncommon to find a few varieties of homemade and store bought varieties in the freezer. These, however, are a very special variety.

Peach Ginger and Kefir Popsicles

 

Makes 10 servings

1 (15 ounces) can Libby’s Yellow Cling Peach Slices (in pear juice)

3 tablespoons crystallized ginger

2¼ cups vanilla kefir

In a blender, puree together Libby’s peaches, crystallized ginger, and ½ cup kefir. Carefully pour halfway up popsicle molds and freeze upright for about 15 minutes.

Pour remaining kefir into each mold and freeze for at least 5 hours.

Enjoy!
